No Bake Peanut Butter Energy Bites

I’ve been making an effort to use my collagen powder more to increase my collagen intake, and these are the perfect way to do it! My knee has been bothering me from running for a little and collagen powder contains glucosamine, a natural compound found in cartilage that helps support bone growth. I love the Perfect Supplements grass-fed collagen powder!

These no bake energy bites are sweetened only with 1 tbsp of honey, so they’re perfect as an afternoon snack, breakfast, or dessert! Super simple to make, and a great snack to meal prep for the week!


Recipe

Ingredients:

  • 1/2 cup natural peanut butter (make sure to buy with no added oils b/c the added oils are extremely unhealthy)

  • 2 tbsp flax seeds

  • 1/4 cup almond flour

  • 2 scoops of collagen powder (optional but recommended)

  • 1/4 cup quick cooking rolled oats (organic & gluten-free)

  • 1/2 tsp cinnamon

  • 1/4 tsp natural vanilla extract

  • 1 tbsp melted coconut oil

  • 1 tbsp honey (I used manuka honey - I'm sure you could use maple syrup as well)

  • 1/4 cup chocolate chips (try to buy chocolate chips with as few ingredients as possible)

Instructions:

  1. Add all the ingredients to a large bowl

  2. Mix everything together

  3. Form into balls - warning: they’re gonna be a little crumbly so you have to kind of cup them together instead of rolling haha but chilling them in the fridge will help them stay together better!

  4. Let them chill in the fridge for a few hours, and store them in the fridge

  5. Enjoy!! 💛
